醬燒蒸茄/Purple Power

記得剛來荷蘭頭幾個月,辦公室的同事嚷著要吃中菜,倒不是因為我們這些亞洲留學生在場的緣故,而是他們本身就喜歡吃中菜,最後這個"go together for Chinese food"竟變成我們聚會的模式。

這讓當時還是newcomer的我覺得很有趣,有次終於忍不住開口對其中一位荷蘭同事說不如下次換去吃荷蘭菜?"Are you sure?" 她不置可否地回答 (當時還不知道其實沒有所謂荷蘭菜這種東西,哈哈!)

因為疫情的關係,餐廳關門 ,人們要相聚吃喝變成不可能,過往大夥一起中菜的情景倍感珍貴。不能一起吃,但總可以動手做吧,因為好友莎拉喜歡茄子,我嘗試弄一道「醬燒蒸茄」,希望這簡單、好吃的下飯菜,在不久的將來能在餐桌上與朋友共享。

As social distancing is becoming a new norm in society, there is no way for us to continue that particular routine. However, I would like to share a homemade dish, called "Purple Power", with friends who are interested in food. I hope that one day we can all physically gather around a table again, full not only of delicious food but also of friendship.


材料:圓茄一顆、蒜頭、青蔥;
調味料:素蠔油、醬油、麻油、糖



蒜頭和青蔥切顆粒,素蠔油約1.5匙、香油2大匙、
醬油1大匙、糖少許


將蔥蒜和調味料攪拌在一起備用


茄子切塊後先充分泡水十分鐘,之後把水倒掉,再把茄子
放入蒸鍋裡蒸18分鐘(茄子大小可以比照片中的小一點,
蒸出來的口感會更綿密更好吃)

18分鐘後打開鍋蓋,淋上調味醬料,再蓋鍋蓋蒸2-3分鐘


之後把茄子與醬汁拌均勻就可以啦
(喜歡吃辣的可以加一些辣椒),

Ingredients (serves 2-3):
1 eggplant
2 heads of garlic
1 Chinese onion
20-25 cc soy sauce
10 cc (2 tsp) sesame oil
10 cc vegetarian mushroom stir-fry sauce or soy sauce paste
A little sugar
Chili (optional) 

Cooking Method:
1. Cut the eggplant into cubes, and soak the diced eggplant in water for 10 minutes
2. Chop the garlic and Chinese onion, mix them with the sauces, oil and sugar
3. Remove the eggplant from the water and steam for 18 minutes
4. Pour the mixed sauce on the steamed eggplant, and then steam for another 2-3 min
5. stir the steamed eggplant well with the sauce, add some chili if you like
6. then enjoy the dish!
